You have some good cookie
recipes. However, for the
icing this really works out
well. Just get a tub of white
or chocolate icing from the
store. Whip it with an
electric mixer. You'll get the
lighter icing that they use as
a filling. |

Mrs. Fields Cookies
2 c butter, room temp
2 c brown sugar
2 c sugar
4 large eggs
2 tsp vanilla
4 c flour
5 c powdered oatmeal (take
regular oatmeal and put it
through a food processor until
it's powdered
1 tsp salt
2 tsp baking powder
2 tsp baking soda
24 oz chocolate chips
1 8oz hershey's bar, grated
3 c chopped nuts (optional)
Cream together the butter,
sugar, brown sugar. Mix
together your dry ingredients
(flour, salt, baking
soda/powder, oatmeal, and
hershey's) in a separate bowl.
Add your remaining wet
ingredients to the butter mix.
Slowly combine the wet and dry
mixes. At the very end add the
chocolate chips and the
chopped nuts.
On a parchment lined sheet,
place golf ball sized
spoonfuls 2 inches apart. Bake
for 6-8 minutes at 375
degrees.
Makes 9 doz. |

I want to make a cookie cake
for V-Day and the icing they
use in the store made cookie
cakes is AMAZING. It seems to
have a strong vanilla taste
and be much thicker. Any ideas
or recipes out there for this
icing? |

SNOW WHITE BUTTERCREAM ICING
This buttercream icing has an
ideal consistency for frosting
cakes. It has a firm quality
making it good for wedding
cake decorations and flat
surface or flower nail
flowers. Air dry decorations
for 24 hours.
2/3 cup water
4 tablespoons meringue powder
12 cups sifted confectioners'
sugar
1-1/4 cups shortening
3/4 teaspoon salt
1/2 teaspoon almond flavoring*
1/2 teaspoon clear vanilla
flavoring*
1/4 teaspoon butter flavoring*
(* or 1¼ tsp. of your
favorite extract to make it
taste like you want it to.)
Combine water and meringue
powder; whip at high speed
until peaks form. Add 4 cups
of sugar, one cup at a time,
beating after each addition at
low speed. Alternately add
shortening and remainder of
sugar. Add salt and
flavorings; beat at low speed
until smooth.
YIELD: 7 cups icing. Recipe
may be doubled or cut in half;
however, if cut in half, yield
is only 2-1/2 cups. |
