What is the best way to storeherbs, garlic, onion, etc forlong term use?
I would like to store herbs, garlic, onions, potatoes, etc for long term use. Most of what I buy tends to go bad before I use all of it. Any suggestions?
Dehyrdate them and then vacuum seal them. If you take out the water, other organisms and internal enzymes in the herbs will not go active and break them down. Seal the air out, and you take away the chance for oxidative damage to the herbs. They will not keep forever, but it will extend storage. then keep them in a cool, dark place.

Potatoes typically store food as amylose (starch). Onions store food as sugars. An onion has more sugar than an apple of equal size! Potatoes evolved in a cold climate where long term survival may be required before growth can occur. Starch is relatively insoluble so it doesn't effect osmotic pressures in the tuber cells. Onions have a lot of water in the bulbs which could freeze in winter. The sugar provides energy necessary to bloom and set seed before cold weather arrives.

I have heard to trim off the top a bit and put in a glass of water in the fridge. Is this correct? What's the best way to keep it fresh and prevent premature wilting?
Stand them root side down in a tall glass will help them to stay more "alert", but they are generally not the best thing to keep for too long. They are best in the fridge.
